Explore the art of cooking from the ground up!
Course Description
An immersive two-week pre-college program, "Cooking from Scratch" offers hands-on lessons in essential culinary techniques, from butchery and stock-making to crafting sauces and preparing international cuisines. Participants will visit a local farm to understand the farm-to-table process, work alongside experienced chefs to create dishes from scratch, and gain insight into a range of culinary traditions including Italian, Asian, Latin, and South Asian cuisines. By the end of the program, students will have developed a variety of kitchen skills, learned the importance of sourcing quality ingredients, and explored potential culinary careers. The experience culminates with a tour of a local restaurant and a graduation ceremony featuring a guest chef.
Training Chef Douglas Best
Students will be taught by Training Chef Douglas Best and the nationally recognized Vanderbilt University Campus Dining team. Born and raised in Olympia, WA, Best discovered his passion for culinary arts while serving in the military, finding that food brought people together and was a great way to de-stress.
Following the military, he enrolled in the culinary program at The Art Institute in Nashville, TN. After graduation, Chet Best honed his skills working in fast-paced gastropub kitchens. Chef Best currently oversees the Vanderbilt Culinary Academy and the Underground Supper Club events.
